We are seeking an Assistant Executive Chef to manage our kitchen. You will need to continue the well established quality and consistency of food Russell's Restaurant has delivered for the past 30 years. We are a smaller restaurant and our menu has not changed very much in the past 15 years. We are a seasonal business and we expect hard work during the busy times. With the seasonality comes extended vacation times. You will work under our Executive Chef who has been with us for over 20 years. All of our existing kitchen staff are great at their jobs and the biggest thing we are looking for is someone who can manage the administrative side of running a kitchen as well as help manage the kitchen and staff.
Responsibilities:
Be involved in day-to-day culinary operations
Coordinate food and kitchenware orders
Maintain well working kitchen equipment
Check freshness and quality of ingredients
Ensure all food is consistently prepared correctly
Ensure all food is consistently cooked, presented and served correctly
Work with Executive chef to manage all prep chefs, dishwashers and line cooks
Set schedules
Find additional help when needed
Communicate with kitchen staff on a regular basis
Ensure all kitchen employees know the expectations of their job
Ensure all kitchen staff have methods for expressing their concerns
Hold kitchen staff accountable to all policies and procedures
Work with management team to continually improve operations
Have all Colorado Health Code required certifications
Qualifications:
Previous experience in managing a kitchen
Proven track record of delivering consistent food
Knowledge of cost and labor systems
Extensive knowledge of meats and seafood
Must speak Spanish and English fluently
Strong leadership qualities
Ability to thrive in a fast-paced environment
Ingenuity and critical thinking
Great computer skills
Compensation:
$45,000/year
Dining Credits at Russell's and Los Amigos
